Last winter, I was eating my favorite bread at my favorite restaurant in New York —Rolo’s, when the manager approached our table and asked me if I wanted to take a tour of their kitchens. At the end of a (very impressive) tour, they asked me if I would ever want to collaborate on an event or pop-up one day. Of course I would.
That day, February 25th, is now approaching fast. You can reserve a table now!
I’ve been joining the team at Rolo’s for a few shifts while they show me the ropes of their incredible kitchen, where a majority of the dishes come to life in a 900F wood-fired oven or an open-fire and coal grill.
As usual, I’m inspired by my favorite home-cooked Bangladeshi dishes and how their flavors bend when translated to a bistro-style dinner. I hickory-smoked eggplant bharta and blended Desi fried shallots into a deeply savory butter (to go on my Rolo’s famous wood-fired polenta bread)! I can’t wait for you to try these and more.

Menu is a-la-carte, meaning you choose what you want to order.
Some of Rolo’s staple dishes will still be available for those of you who have never been!
To make production as easy as possible, the meats are sourced from Rolo’s trusted, high quality farms and vendors. However, this menu has plenty of veg-based dishes to choose from. My favorite dishes are the meatless ones, tbh.
If you don’t get a reservation, don’t worry, walk-in space will be for you on the night of.
If you make a reservation and cannot make it, please do not wait to cancel it so others can join. We want as many people as possible to enjoy this event.
